Paleo Pancakes

It may have been two years since I posted...
but I still check back on my blog for recipes.


Here's one I'm sick of scrolling through 12 months of photos on Instagram for.
PALEO PANCAKES!!
A.K.A Lembas Bread (but taster)

I also forgot to add "1 c of bananas" to the written recipe in the picture below.

This is the recipe I've been messing with. Keep extra almond meal on hand in case this version ends up being to runny

Paleo Cakes (aka lembas bread)

3 c almond meal
2 t baking powder
1t cream of tartar
1c coconut milk
1.5 ts of vanilla extract
4 eggs (may need one more)
1 c apple sauce
2 c of fancy shredded coconut (to taste & consistency preference)
2 sm-md mushy bananas

4 T of coconut to toast on top
(1 - 2 cups of chocolate chips... omg so good)

to try sometime:

1 c of almond m + 1/2 c of honey
OR
4 T of candied lemon zest on top + 1 T of lemon juice
OR
pears instead of apples or mashed strawberries or frozen berries YUM!!!

Intructions:
Mix the wet and dry ingredients separately before mixing them together except bananas (and chocolate chips). Let the whole mixture sit for 30-60 minutes (if you want, it will make the cake spongier). Mash in the bananas (and add chocolate chips).
Batter should be sticky & runny, like an overly thick pancake batter.
Pour into a greased 9 x 13(ish) cake dish. Bake at 350 F for 30 - 40 minutes, knife/fork should come away clean from the center of the cake if cooked thoroughly.
